Before I get into the recipe, I want to be very honest about what this brownie is meant to be.

This is not a light snack brownie or a “have three with coffee” kind of dessert.

This is a deliberate, high-protein, almost meal-level brownie that I started making on days when I wanted something deeply chocolatey but also needed serious protein in one sitting.

It’s dense, fudgy, rich, and very filling. If you like protein desserts that actually feel substantial and not airy or fake, this one is it!

This recipe is designed as one large, single brownie that delivers roughly 75 g of protein in one serving.

You can cut it smaller if you want, but the protein count listed is per full brownie.

I’m adding variations and substitutes at the bottom of the recipe. You can use chocolate chips or get a nice big dark chocolate bar and cut those up in chunks!

Tips to Make It Even More Delicious

  • Always blend the cottage cheese completely smooth or the texture will suffer.
  • Use a chocolate protein powder you genuinely like the taste of because it carries most of the flavor.
  • Underbake slightly for a fudgier center instead of a dry, cakey texture.
  • A tiny pinch of espresso powder deepens the chocolate flavor without tasting like coffee.
  • Let the brownie cool fully before eating for best texture and flavor.
  • I personally use include high-quality chocolate protein powder, low-fat cottage cheese, unsweetened cocoa powder, and a compact blender for smooth batter.

Ingredients

  • 600 g low-fat cottage cheese

  • 4 scoops chocolate protein powder with no added sugar

  • 2 large eggs

  • 3 tablespoons unsweetened cocoa powder

  • 40 g dark chocolate chips or chopped dark chocolate

  • 1 teaspoon vanilla extract

  • pinch of sea salt

  • optional zero-calorie sweetener to taste

  • protein powder (2 scoops per serving): ~40–45 g protein

  • egg contribution: ~6 g protein

Directions

  • Preheat your oven to 175°C (350°F) and line a small square baking tin or loaf pan with parchment paper, leaving enough overhang to lift the brownies out cleanly after baking.
  • Blend the cottage cheese in a blender or food processor until completely smooth and creamy, which is crucial for achieving a fudgy brownie texture instead of a grainy one.
  • Transfer the blended cottage cheese to a mixing bowl and add the eggs, protein powder, cocoa powder, vanilla extract, salt, and sweetener if using, then mix until the batter is thick, glossy, and fully combined.
  • Fold in most of the dark chocolate, reserving a small amount to sprinkle on top for a more indulgent finish.
  • Spread the batter evenly into the prepared pan, smooth the top, and sprinkle the remaining chocolate over the surface.
  • Bake for 22–26 minutes until the edges are set but the center still has a slight softness, then remove from the oven and allow it to cool completely before slicing into two equal servings.

Notes

  • This goes so beautifully with a glass of milk.

Variations and Substitutes

  • For dairy-free, replace cottage cheese with thick silken tofu and use plant-based protein powder.
  • For a slightly softer texture, add 1 tablespoon nut butter without reducing protein powder.
  • For less intensity, cut each brownie in half and treat it as a high-protein snack instead of a meal.
  • For extra richness, swirl sugar-free chocolate spread on top before baking.
  • If sweetness is lacking, use a flavored protein powder instead of adding sweetener.
