I absolutely love eggnog. And on days when I have leftover eggnog, this is my go-to recipe if I’m feeling too lazy to cook breakfast.

If I could bottle the feeling of a slow December morning, it would taste like these overnight eggnog oats.

They’re creamy, cozy, and spiced just right — like dessert disguised as breakfast.

I started making them last Christmas when I was craving something festive but didn’t want to turn on the stove.

Now, they’ve become my favorite easy holiday breakfast. I make a batch at night, pop it in the fridge, and wake up to something that tastes like Christmas morning in a jar.

Tips to Make It Even More Delicious

  • If you’re feeling indulgent, stir in a spoonful of nut butter before serving — almond or pecan butter adds a lovely warmth.
  • For extra protein, add a scoop of vanilla protein powder or collagen peptides before refrigerating — it blends perfectly with eggnog.
  • Use rolled oats , not quick oats; they keep their texture and give you that perfect creamy-chewy bite.

Ingredients

  • 1 cup rolled oats

  • 1 cup eggnog (regular or dairy-free)

  • ¼ cup Greek yogurt (optional for creaminess)

  • 1 tablespoon chia seeds (optional, for texture and fiber)

  • 1 tablespoon maple syrup or honey

  • ¼ teaspoon cinnamon

  • ⅛ teaspoon nutmeg

  • ½ teaspoon vanilla extract

  • Pinch of salt

Directions

  • In a medium bowl or jar, combine the oats, eggnog, yogurt, chia seeds, maple syrup, cinnamon, nutmeg, vanilla extract, and salt. Stir really well so everything’s evenly mixed — no dry oats hiding at the bottom.
  • Cover the bowl or jar with a lid or wrap, then refrigerate overnight (or at least 4 hours). While you sleep, the oats soak up all that creamy eggnog goodness and turn into the dreamiest holiday breakfast.
  • In the morning, give the oats a good stir. If it’s too thick, add a splash of milk or extra eggnog. Top with whipped cream, a sprinkle of cinnamon, or a few crushed gingersnap cookies for that bakery-style finish.
